Prepare the chicken legs by slicing the bottom inch of the leg meat. Cut to the bone all around the leg and remove the skin and meat all the way to the base of the bone. Push the meat to the opposite side of the leg.
Season meat with Alpha Rub, then Smoke Rub to your liking.
Cook on the grill or smoker until they reach an internal temperature of 150.
Dip each chicken leg into the sauce, turning the meat to get a heavy coat. Place back on the grill for 15 minutes.
