Chicken Lollipops

Chicken lollipops, or clucker suckers, are a fun dish to serve as an appetizer or main dish. Preparing the chicken legs is simple and they are pretty darn delicious.

Start by cutting about 1 inch above the thinnest part of the meat of the chicken leg. Cut to the bone all around the leg, then pull all meat and skin to the bottom and remove. See the pictures below for an example. It may be easier to use a paper towel to get a good hold on the skin and meat when removing.

Next, press the meat to the opposite end of the leg, then season with Alpha Rub, then Smoke Rub. Cook until the meat reaches an internal temperature of 150. Then dip each leg into the Apple BBQ Sauce, generously coating the meat. Place back over direct heat for 15 minutes.

And that is it! Allow to cool and enjoy!

Chicken Lollipops

Ingredients

  • 8 Chicken Legs
  • Alpha Rub
  • Smoke Rub
  • 2 cups Apple BBQ Sauce

Instructions

  • Prepare the chicken legs by slicing the bottom inch of the leg meat. Cut to the bone all around the leg and remove the skin and meat all the way to the base of the bone. Push the meat to the opposite side of the leg.
  • Season meat with Alpha Rub, then Smoke Rub to your liking.
  • Cook on the grill or smoker until they reach an internal temperature of 150.
  • Dip each chicken leg into the sauce, turning the meat to get a heavy coat. Place back on the grill for 15 minutes.
  • Remove, allow to cool, and enjoy.
