Instructions
Remove ham from packaging, place in a roasting pan with a wire rack and season with pepper.
Prepare your heat source with wood, wood chips or pellets for 200-225 degrees.
Add meat to grill and allow to take on smoke for 90 minutes.
Make the glaze by melting the apple jelly in a small sauce pan on low heat until limps have rendered down, then add raspberry chipotle sauce. Stir well then reduce heat and add brandy or cognac (or your liqour). Then add lemon zest.
Remove from heat and allow to cool.
After 90 minutes remove pan with ham and coat ham with glaze. Place back on the pit for another 30 minutes.
