Zest of 1 lime
Juice of ½ lime

For the Shrimp
1lblarge shrimp16/20 count, peeled & deveined, tails on
1Tbspolive oil
1tspkosher salt
½tspcoarse black pepper
½tspsmoked paprika
½tspgarlic powder
¼tspground cumin
⅛tspcayenne pepper
½tspbrown sugar
Instructions
Make the butter by combining softened butter with chipotle peppers, adobo sauce, garlic, lime zest, lime juice, salt, cumin and paprika. Mix until smooth and set aside.
In a bowl, toss the shrimp with olive oil. Add salt, black pepper, smoked paprika, garlic powder, cumin, cayenne, and brown sugar. Stir until shrimp are evenly coated.
Thread shrimp onto skewers, keeping them close together for even cooking.
Preheat grill to medium-high heat. Place shrimp skewers directly over the coals or heat source. Grill for 1 1/2 - 2 minutes per side, brushing with chipotle lime butter as they cook.
Remove skewers from grill and brush with butter one last time. Serve hot with lime wedges and cilantro.
