Grilled Buffalo Chicken Thighs

Grilled Buffalo Chicken Thighs

Ingredients

Chicken

  • 6 chicken thighs
  • 2 tbsp Avocado or Olive Oil
  • 1 lime zested over both sides of chicken
  • Texas Rub or Your Favorite SPG Mix

Buffalo Sauce

  • 1 stick butter
  • 1/2 cup hot sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp accent
  • 1/4 tsp salt
  • 1/4 tsp chipotle powder
  • 1-2 tsp Worcestershire Sauce
  • 2 tbsp heavy cream

SPG Rub

  • 4 tsp Coarse Salt
  • 3 tsp Ground Black Pepper
  • 3 tsp Granulated Garlic Powder

Instructions

  • Trim chicken to your preference
  • Coat lightly with oil
  • Season as desired and add lime zest to each side
  • Melt butter then add hot sauce. Add seasonings and turn off heat. Add cream and let sit.
  • Cook over indirect heat for 10 minutes, then move over the coals/heat turning every 5 minutes until reaching an internal temperature of 165 degrees.
  • Move chicken to cooler side and sauce both sides.
  • Place on pan and add final sauce coating before serving.
