Grilled Buffalo Chicken Thighs
Ingredients
Chicken
- 6 chicken thighs
- 2 tbsp Avocado or Olive Oil
- 1 lime zested over both sides of chicken
- Texas Rub or Your Favorite SPG Mix
Buffalo Sauce
- 1 stick butter
- 1/2 cup hot sauce
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp accent
- 1/4 tsp salt
- 1/4 tsp chipotle powder
- 1-2 tsp Worcestershire Sauce
- 2 tbsp heavy cream
SPG Rub
- 4 tsp Coarse Salt
- 3 tsp Ground Black Pepper
- 3 tsp Granulated Garlic Powder
Instructions
- Trim chicken to your preference
- Coat lightly with oil
- Season as desired and add lime zest to each side
- Melt butter then add hot sauce. Add seasonings and turn off heat. Add cream and let sit.
- Cook over indirect heat for 10 minutes, then move over the coals/heat turning every 5 minutes until reaching an internal temperature of 165 degrees.
- Move chicken to cooler side and sauce both sides.
- Place on pan and add final sauce coating before serving.
