Chipotle Lime Garlic Butter Shrimp

Chipotle Lime Garlic Butter Shrimp

Ingredients

Chipotle Lime Butter

  • 1 stick ½ cup unsalted butter, softened
  • 1 chipotle pepper in adobo minced (plus 1 tsp adobo sauce)
  • 1 garlic clove minced (or ½ tsp garlic powder)
  • Zest of 1 lime
  • Juice of ½ lime
  • 3/4 tsp kosher salt
  • ¼ tsp cumin
  • ¼ tsp paprika

For the Shrimp

  • 1 lb large shrimp 16/20 count, peeled & deveined, tails on
  • 1 Tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp coarse black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cumin
  • tsp cayenne pepper
  • ½ tsp brown sugar

Instructions

  • Make the butter by combining softened butter with chipotle peppers, adobo sauce, garlic, lime zest, lime juice, salt, cumin and paprika. Mix until smooth and set aside.
  • In a bowl, toss the shrimp with olive oil. Add salt, black pepper, smoked paprika, garlic powder, cumin, cayenne, and brown sugar. Stir until shrimp are evenly coated.
  • Thread shrimp onto skewers, keeping them close together for even cooking.
  • Preheat grill to medium-high heat. Place shrimp skewers directly over the coals or heat source. Grill for 1 1/2 – 2 minutes per side, brushing with chipotle lime butter as they cook.
  • Remove skewers from grill and brush with butter one last time. Serve hot with lime wedges and cilantro.
