Just call this tasty delight “Cajun Royale”. Chicken stuffed with boudin, wrapped in bacon, and grilled to perfection. Royal indeed!
If you are using a spicy boudin, reduce the amount of Cajun Seasoning to your taste.

Bacon Wrapped Boudin Stuffed Chicken
Ingredients
- 3 Chicken breasts
- 1 Link Boudin cut open
- 6 Pieces of bacon
- 1 tbsp Alpha Rub
- 1 tbsp Cajun Seasoning
Instructions
- Cut chicken in half and place in a plastic or Ziploc bag. Flatten cutlet with mallet.
- Season both sides of chicken with Alpha Rub & Cajun Seasoning. Spread enough boudin on chicken to almost cover completely. Roll chicken from one end to the other, keeping boudin from spreading out. Wrap tightly with bacon and secure with toothpick. Sprinkle both sides with Cajun Seasoning.
- Prepare grill then cook over direct heat until done, turning each piece 5-6 minutes on all sides.
- Remove chicken from grill and allow to cool 10-15 minutes. Slice and serve.
